This week I read so many good articles and pinned so much delicious looking food, it was hard to narrow down the best links to share with you. I have done nothing productive as far as my apartment goes… I have real commitment issues when it comes to furniture. And most thing s in general. My gram has been helping pick things for my apartment out because she’s the best (love you, Gram!). AND I will have visitors this weekend and next weekend so I should really stop living out of suitcases in my closet and get my act together.

Iceland has been on my travel list for a while. It’s actually pretty inexpensive to get to (at least from the East Coast) and at this point, would be comparatively cheap to travel in as opposed to my daily living expenses in SF haha. Love this list of Icelandic adventures!

A trip to Morocco has been on and off the books for the past couple of summers BUT 2015 WILL BE THE SUMMER OF MOROCCO. And of course we’re going to have to trek through the Atlas Mountains and be all Casablanca about it.

You know I’m all about treating yo’ self. Lauren Conrad (I KNOW!) has a great breakdown of spa etiquette.

We all know your phone is dangerous because you could take a selfie with a tiger or walk into a bear texting or brain cancer from the radiation… but there are also hidden phone dangers, such as someone seeing the screen shot you took of your convo with your best friend. Not that I do that or anything.

In case you didn’t know, I hated leaving the house in Pittsburgh because… well.. Pittsburgh. I was so over everyone. ANYWAY being a homebody is great and all but you need to break the “not leaving the house habit” sometimes.

To be gluten free or not to be gluten free, that is the question. Honestly, I don’t really eat it because my body doesn’t love it. The New York Times has an admittedly long piece on gluten and what it has meant to the American food culture the past few years.

I’m back on the sweet potato train after taking a little break from root veggies (aka getting burnt out on root veggies). Now to make these oat and pistachio crumble baked sweet potatoes.

I want to make these raw almond butter and chia jam bars with chocolate ASAP.

A ramen festival in Tokyo had a white table just for Instagramming bowls of ramen. Is this taking it too far?

I can understand having a designated area for pictures in a ramen festival–I think it is more a part of their culture to photo their food even compared to ours. And I can see it holding up the line. There is something genius about it, but also completely ridiculous. On the fence about it.

I find it hilarious that they had a designated table for grammin’ their ramen. I don’t think it is taking it too far. I must admit that last week after eating thai food for the first time I had an urge to take a pic, but refrained. It’s become the norm I guess haha. Also, the article on different gluten-free flours is super cool. I’m doing my capstone on coconut products. My group and I cook a meal for our professor, family, and whoever else shows up. Anyway, we are making a coconut flour crust pizza. (delicious) Always cool to learn about different flours. Have you seen the picture on Pinterest with the guy standing at the doorway with a box of flours saying “hey, I brought you some flours.” I love it lol. I would personally be happy with that, although I do like the occasional flower. Also, those raw bars look AWESOME!

Capstone is tomorrow! So yes I have tested it a few times.. some for practice and some because I just wanted pizza. It is awesome! The recipe makes two so maybe have a friend over and have a pizza night or half the recipe!
Here is the recipe:
Yield: Makes approximately two 8″ thin crust pizzas
• 4 good quality eggs
• 1/4 cup coconut flour
• 1/4 cup plain yogurt
• 1 tsp organic onion powder
• 1 tsp organic oregano
• 1 tsp organic basil
• 1/3 cup shredded parmesan cheese
• 2 cloves organic garlic, minced
• 1/4 tsp sea salt
1. Whip the eggs in a large bowl with the yogurt and sea salt.
2. Add the coconut flour and whip until very smooth with no lumps. This may take a few minutes to accomplish as it takes some time for the coconut fiber to absorb the liquid.
3. Blend in the onion powder, oregano, basil, garlic, and parmesan cheese.
4. Line a pizza pan with parchment paper and gently pour about 1/2 the batter onto the paper lined pan. Use a spatula or other kitchen utensil to spread the batter into an 8-9″ circle that is quite thin (the thinner the better).
5. Bake at 400F for 10 minutes.
6. Remove pan from oven, add homemade pizza sauce, cheese and other toppings as desired.
7. Place back in the oven on broil for about 8 minutes more.
8. Repeat this process with the remaining half of the coconut flour batter.

Not 100% convinced I’m leaving the house tonight…. buuuut maybe soome time this weekend I will ;) haha. Um, all I want in life are those chocolate/chia/almond butter bars, holy cow. And designated Instagramming areas? Kind of a funny concept, buuuut a little ridiculous IMO! Haha

The weirdest thing I found all week (which is old news but I don’t even care) is there is a hot peanut beverage, like hot chocolate, but hot… peanut (called Peanut Hottie, what a name). And though I love peanut butter, this is maybe taking things too far.

Ugh, I have a tough time getting my butt out of the house sometimes too. Introvert problems. And it doesn’t help that my boyfriend is introverted as well AND we just had the biggest cold front move into my area here in Northwest Arkansas this past weekend. My body doesn’t handle cold well. It downright rebels! And puts me in a bad mood…ha! But I know I need to make up more excuses to get out anyway, freezing my butt off or not. Ah, Morocco! One of the top places on my list I’d love to travel to! Maybe honeymoon in far future?…:)

My biggest phone danger is definitely someone seeing all my screenshots, or the convos I have with my BFF about those screenshots (usually of convos with other people haha)
And I’m planning to leave the house at least once everyday this winter. It’s an actual struggle sometimes- not even joking
