Chocolate Coconut Pistacho Energy Bites | almost getting it together

I’m currently going through a pistachio obsession. I’m throwing them in everything: oatmeal, smoothie bowls, yogurt and my favorite – energy bites. I never really ate pistachios until recently and now I can’t get enough.

These Chocolate Coconut Pistachio Energy Bites are much like my Chocolate Chip Cookie Dough Energy Bites – seedy thanks to the figs, hemp and pistachio. I really need chocolate in basically everything I eat, so of course I added in cacao powder. Oh, and did I mention they are less than 70 calories each? Totally guilt free.

The perfect pre-workout bite or afternoon treat.

Chocolate Coconut Pistacho Energy Bites

Recipe type: Gluten Free

Serves: 12
  • ½ cup dried figs
  • ¼ cup shelled pistachios
  • 2 tbsp chocolate coconut peanut butter
  • 1 tbsp hemp seeds
  • 1 tbsp unsweetened shredded coconut
  • 1 tbsp cacao powder
  • 1 tbsp honey
  1. Put all ingredients in food processor and process until well processed and sticking together
  2. Put mixture into a covered container and chill in refridgerator for at least 30 minutes up to overnight.
  3. Roll mixture into 1" balls.
  4. Store in fridge for up to a week.

I don’t buy pistachios that often but I might just have to now. I am going through a walnut obsession.. have a walnut energy bite recipe coming next week haha. #greatminds

I went through a pistachio phase! Mostly because the shelled guys were on sale so I stocked up, but now I’m too cheap to buy more. Poor girl pistachio problems…I think I should get that made into shirts. Thoughts?

Uhhh a big fat YES to chocolate in everything haha! Pretty sure you could chocolate on spaghetti and it would still be delicious ;). Maybe not… but you get my point!

These look great! I’m a haauuuuuggee fan of energy bites since they’re so portable and delicious! Great recipe!

Almonds and chocolate! But that’s mostly because those are basically the only kind of nuts I can eat without having to deal with pesky allergies afterwards. I’m loving the sound of pistachios and figs though — sounds so wonderfully exotic ;)
