Beet Apple Lime & Ginger Juice for Runners [Vegan, Gluten Free]


It’s not really a huge secret I want to write a book some day. I have an entire book outlined (well, two – one lifestyle guide and one memoir-style) but I’m not sure if it’s something I am ready to have out there. Basically, it’s about all of the boys who have come in and out of my life and the things I have taken away from each situation.

One of these boys is the reason I love beets. He took me to dinner in Brooklyn and asked if I liked beets. I totally admitted that I really wasn’t sure. This is the girl who couldn’t remember what foods she liked and had to call her mom to ask in college because her parents made her try every food ever. Anyway, he ordered some beet and goat cheese salad and I was hooked.


I totally tried photoshopping the creases in my wrist – and photoshopped juice off my arm.

As I’ve been focusing on becoming a better runner this past year, especially focusing on nutrition, I have been eating a lot of beets. Beets are a great source of nitrate which basically increases your endurance (you can read more about it on Runner’s World). They are also low calorie, high in fiber and high in Vitamin C. The week before my marathon, I drank beet juice every day.

I actually pulled out my juicer and developed a beet juice that I like to think is made specifically for runners – it includes beets (duh), apple, lime and ginger (to reduce inflammation).

Beet Apple Lime & Ginger Juice
Recipe type: Juice

Serves: 1 juice
  • 4 beets
  • 1 apple
  • ½ lime
  • 1 inch ginger
  1. Place all ingredients in order into a juicer.
  2. Drink immediately.

This sounds amazing, I hope you will join us for meatless monday with it :) I love beets, and I try to get them in as much as I can….havent tried a smoothie yet though….hmmm! Sorry I did not call back last night, by the time you called I was almost phone….and was on the phone to another friend, and I hadn’t seen steve since wed, so was with him after, but sometime this week? Should have texted you all this haha

I’m not a juicer but this flavor combo sounds amazing. Gonna have to figure out another way to use it, huh? I too want to write a book. But what the hell to write it on? That is the question.

I won’t lie- beets freak me out. I just haven’t been able to try them. I should just try them, ha. I do love smoothies though! I used to hate all veggies. I still hate a lot but I’m a larger fan of broccoli when a few years ago I never ate it.

I don’t drink a lot of Naked Juice – but I do love beets! I prefer to have them in edible form – but I have also added beet puree to smoothies and hot chocolate! I’ve sauteed beets and garlic and ginger and lemon before and loved it – so I am thinking I would so love your combo of beets with ginger and lime – in juice form!

I actually had beet juice this morning! With carrot, apple, romaine and chard. I Beet + apple are two of my favorites, but I’ve never tried it with lime. Next time!

I used to hate beets when I was younger, too. My mom would always make this beet soup around the holidays, and I refused to drink it up until a few years back when I discovered that heyyyyyy… beets are actually pretty delicious. I’ve never tried juicing them, though!

I’ve never had beet juice. I always see it with the fresh pressed OJ at my local grocery store but I’ve never tried it. I don’t love beets in general but I think I could give it a shot if it were mixed with apple and lime.

I’ve used borscht in a Lithuanian cold soup recipe before, but have never tried making beet juice–this looks like it’d be super refreshing! :D Perfect for this super-warm days we’ve been having! :]

I would totes read your book! (duh) There is a place called black sheep that has a goat cheese & beet salad. I didn’t think I liked beets until I had it. Amazing. I have never had beet juice though. That needs to change! (especially with training)
