Fun fact: I’ve had this recipe since June. This is the last recipe I have saved so hopefully my kitchen things come soon. Also I really miss all of my kitchen things and I’m craving a green smoothie so my heart is pretty broken right about now.

Where do you find antioxidant mix or what even is antioxidant mix, you ask. Well, I found it at Costco. It’s from Made in Nature Brand and technically it’s super berry mix or something, but you can find it on Amazon, too. They also make amazing unsweetened dried bananas, too. Pick up a bag of each and I promise I’ll make and photograph a recipe with them… because I’ve made it twice but devoured it before photographing it.

Starting over in an apartment with absolutely nothing except some clothes is so exhausting. The past 5 days have been shopping, shopping, shopping, but not for fun things like clothes and shoes but instead for exhausting things like dishes and towels and restocking my entire kitchen. Luckily, I did have a little break and hung out with Gina and Kay, both of who I am so excited to see more of, but more on that later in the week.

Anyway, so make these guys. They are gluten free, vegan, paleo, whatever. If you haven’t tired of energy bites, check out my other energy bite recipes, like chocolate coconut pistachio and vanilla fig.

Antioxidant Energy Bites

Recipe type: Gluten Free, Vegan
Serves: 24 1" balls
Ingredients
  • 1 cup cashews
  • ½ cup dates, soaked
  • ½ cup antioxidant mix
  • 2 tbsp cacao powder
  • Pinch pink Himalayan sea salt
Instructions
  1. Soak dates in filtered water for at least 30 minutes.
  2. Pour out water and place dates in food processor.
  3. Add all other ingredients to food processor.
  4. Process until a ball begins to form. You may have to scrape down sides a few times.
  5. Place mixture in a bowl and put in refrigerator for at least 30 minutes.
  6. Once mixture has cooled, roll into 1" balls.

Ooooh these sound like the kick I need to get back into my healthy eating! Love the idea of using an antioxidant mix! I think we have something similar from Trader Joes. I wish I could help you unpack! would be fun to hangout :)

I was willing to help unpack until you mentioned TS… I’m sorry, I just can’t. But I [kind of] know how you feel about being moved into a new place and having nothing in it. I left everything at hime and started from scratch when I moved out on my own, and while I tried to pick up all the necessities early, I can’t even tell you how many times I ran into a situation where I didn’t have something that I didn’t even know I needed. The best part is that three years later, and it STILL happens to me…

Just bought the new T-Swift CD. Not sure if I like it as much as the last one, but I know first hand that unpacking into a new apartment is a drag. Who knew you didn’t have frying pan? I suggest maybe more dinner/lunch recipes? Good luck with unpacking and apartment shopping!

Fair warning, I myself, been terrible about unpacking. I like to pretend it’s secretly a good thing because then 2 months later I’m unboxing clothes I forgot about and it’s like shopping without paying money.

These look delicious, and I would totally make them, if I ever used my kitchen. I’m going to live vicariously through yours. ;)

These look quick and yummy! I gave up sugar the beginning of the year and it’s amazing how much my taste buds have changed, so much so I now like dark chocolate or unsweetened cocoa powder.

These look awesome! So glad that you are loving SF! Isn’t Northern California amazing?? I totally remember not having a single kitchen appliance when we moved across the country. But, it is a great excuse for trying every.single.restaurant in the area :)

Wine and T Swift will definitely help the cause. =) After moving, I wanted to do everrrrything immediately… I had to remember it didnt ALL have to be done in a day! Haha. I gave up on everything being done in a day. Truly I really just need some sort of bookshelf sitch, a nightstand and a dresser and the basics are done and everything will be put away :)

Have you hit your energy bite quota yet? Um girl, what kind of question is that. Of course you haven’t! Once your kitchen appliances show up, I’m thinking you should start creating even more… you know when your not busy @ work or exploring your new neighborhood. Haha! Speaking of new neighborhood, maybe you could find a place that makes killer green smoothies for the time being?

There are a tonnnn of healthy places near me, a smoothie spot I haven’t had a smoothie at (but have had brunch and a bunch of salads lol. I already made new energy bites with my food processor haha. I have never been so happy to see a kitchen appliance.

I lived on my friends couch for about three weeks at the end of summer and being without all my kitchen stuff sucked! It’s weird how I went from not cooking at all a couple years ago to being more upset about the lack of kitchen time than the lack of bed HA

DUDE my family is obsessed with that mix! My parents have 3 costco sized vats of those things in their home at all times! I haven’t touched it in a year though after I went overboard on a road trip to Montreal. Gonna need Margie to pick some of it up for me (in addition to the giant thing of coconut oil now that I am a hippie and put it everywhere…)
